Flavour first food
Paul grew up in the Scottish Borders, and, whilst working in the local hotel, was drawn to the theatrics of the kitchen, “crazy characters seemingly in a world of their own- the chaos was strangely attractive”.
Paul moved to Bath early in his career to work at the 1 Michelin Star Bath Priory, returning to his native Scotland on the Isle of Skye to work with 1 Star chef Michael Smith at the Three Chimneys.
He joined 1 Star Martin Wishart in Edinburgh, progressing to Sous Chef and helped launch his brassiere and restaurant in the Five Star Cameron House.
Paul spent a year with Simon Rogan at the 2 Star L’enclume in the Lake District, moving to Manchester at Simon’s new restaurant, the French, where he worked as Sous Chef and was promoted to Head Chef of the 4AA Rosette restaurant following Adam Reid becoming Chef Patron.
Paul returned to Scotland in 2019 to become Head chef at the Five Star Torridon, where he truly worked farm to fork, using fruit and vegetables from the kitchen garden, and beef and pork from the animals reared on the grounds. Paul was awarded 3 AA Rosettes.
Paul has also staged in some high-quality restaurants around the world, including 3* Le Bernardin and 3* Restaurant Gordon Ramsay.
Paul’s food philosophy is flavour first. Keep it simple with wonderful local quality ingredients treated with maximum respect. Paul has a particular affinity for seafood and a developing interest in vegetables. He has travelled to Cornwall with his young Bullmastiff, Aoife, a mere 58kilo and still growing, to join the team at Driftwood. He's looking forward to putting his food philosophy into practice and offering guests food they will want to eat.

Paul will be bringing his own unique twist to the Driftwood menus, so it's an exciting time to join us for a coastal dining experience. Expect lots of locally sourced seafood, exceptionally fresh ingredients, and perfectly balanced flavours, all crafted into beautifully presented dishes.
